- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup finely chopped pecans
- 1/2 cup corn syrup
- 1/2 cup granulated sugar
- 1 tbsp melted butter
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and brown sugar until light and fluffy.
- Add eggs and vanilla extract; beat until combined.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients and mix until a dough forms.
- Roll the dough into 1-inch balls and place them on the prepared baking sheet.
- Use your thumb or a spoon to create a small indentation in the center of each cookie.
- In a separate bowl, mix chopped pecans, corn syrup, granulated sugar, and melted butter.
- Fill the center of each cookie with a small spoonful of the pecan filling mixture.
- Bake for 12–15 minutes, or until the edges are lightly golden.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- You can toast the pecans for added flavor before adding them to the filling.
- Store cookies in an airtight container at room temperature for up to a week.
- For extra richness, drizzle with melted chocolate after baking.
