Description
A smoky, spicy, and slightly nutty salsa made with roasted peanuts, chipotle peppers, tomatoes, and garlic, perfect for tacos, dips, or rice dishes.
Ingredients

- 1/2 cup roasted peanuts (unsalted)
- 2–3 dried chipotle peppers
- 2 roma tomatoes
- 2 garlic cloves
- 1 tbsp olive oil
- 1/2 tsp salt (or to taste)
- 1/4 cup water (as needed for blending)
Instructions
- Toast the dried chipotle peppers in a dry skillet over medium heat until fragrant. Remove and set aside.
- Roast the roma tomatoes and garlic cloves in the same skillet until charred and softened.
- In a blender or food processor, combine the roasted peanuts, chipotle peppers, tomatoes, and garlic.
- Add salt and a splash of water, then blend until smooth and creamy. Add more water if needed to reach desired consistency.
- Taste and adjust salt or spice level if needed.
- Transfer to a serving bowl or jar and serve or refrigerate.
Notes
- Add lime juice for brightness.
- Include honey or brown sugar for sweetness.
- Mix in a roasted red bell pepper for added depth.
- Use almonds or cashews instead of peanuts for a different base.
