Description

A smoky, spicy, and slightly nutty salsa made with roasted peanuts, chipotle peppers, tomatoes, and garlic, perfect for tacos, dips, or rice dishes.


Ingredients

  • 1/2 cup roasted peanuts (unsalted)
  • 23 dried chipotle peppers
  • 2 roma tomatoes
  • 2 garlic cloves
  • 1 tbsp olive oil
  • 1/2 tsp salt (or to taste)
  • 1/4 cup water (as needed for blending)

Instructions

  1. Toast the dried chipotle peppers in a dry skillet over medium heat until fragrant. Remove and set aside.
  2. Roast the roma tomatoes and garlic cloves in the same skillet until charred and softened.
  3. In a blender or food processor, combine the roasted peanuts, chipotle peppers, tomatoes, and garlic.
  4. Add salt and a splash of water, then blend until smooth and creamy. Add more water if needed to reach desired consistency.
  5. Taste and adjust salt or spice level if needed.
  6. Transfer to a serving bowl or jar and serve or refrigerate.

Notes

  • Add lime juice for brightness.
  • Include honey or brown sugar for sweetness.
  • Mix in a roasted red bell pepper for added depth.
  • Use almonds or cashews instead of peanuts for a different base.
