Description

Peanut Butter Pretzel Bites are a delicious sweet and salty treat made with peanut butter, powdered sugar, and pretzels, then dipped in chocolate for a perfect no-bake snack.


Ingredients

  • 2 tablespoons unsalted butter, softened
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups powdered sugar
  • 48 mini pretzels
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil (optional, for smooth melting)

Instructions

  1. In a medium bowl, mix together peanut butter, softened butter, and vanilla extract until smooth.
  2. Gradually add powdered sugar and mix until a thick dough forms.
  3. Roll the peanut butter mixture into small balls (about 1 teaspoon each).
  4. Sandwich each peanut butter ball between two mini pretzels and place on a baking sheet lined with parchment paper.
  5. Freeze the pretzel sandwiches for about 20-30 minutes to firm up.
  6. In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring in between until smooth.
  7. Dip half of each pretzel sandwich into the melted chocolate and place back on the parchment paper.
  8. Refrigerate until the chocolate is set, about 15 minutes.

Notes

  • You can substitute almond butter or sunflower butter for a peanut-free version.
