- 1 cup creamy peanut butter
- 2 tablespoons unsalted butter, softened
- 1/2 teaspoon vanilla extract
- 1 1/2 cups powdered sugar
- 48 mini pretzels
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil (optional, for smooth melting)
Instructions
- In a medium bowl, mix together peanut butter, softened butter, and vanilla extract until smooth.
- Gradually add powdered sugar and mix until a thick dough forms.
- Roll the peanut butter mixture into small balls (about 1 teaspoon each).
- Sandwich each peanut butter ball between two mini pretzels and place on a baking sheet lined with parchment paper.
- Freeze the pretzel sandwiches for about 20-30 minutes to firm up.
- In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring in between until smooth.
- Dip half of each pretzel sandwich into the melted chocolate and place back on the parchment paper.
- Refrigerate until the chocolate is set, about 15 minutes.
Notes
- Use natural peanut butter for a less sweet option.
- You can substitute almond butter or sunflower butter for a peanut-free version.
- Store bites in the fridge for up to a week or freeze for longer storage.
