- 2 cups plain Greek yogurt (full-fat recommended)
- 1/2 cup creamy peanut butter
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup mini chocolate chips (optional)
- 1/4 cup chopped peanuts (optional)
Instructions
- Line an 8×8 inch baking dish with parchment paper, leaving overhang on the sides for easy removal.
- In a large bowl, mix together the Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract until smooth and well combined.
- Fold in chocolate chips and chopped peanuts if using.
- Spread the mixture evenly in the prepared dish and smooth the top with a spatula.
- Freeze for at least 3-4 hours or until completely firm.
- Once frozen, lift the mixture out of the dish using the parchment paper and cut into bars.
- Store the bars in an airtight container in the freezer.
Notes
- Allow bars to sit at room temperature for a few minutes before eating for a softer texture.
- Use full-fat Greek yogurt for the creamiest results and fewer ice crystals.
