Description

Delicious no-bake bars made with Greek yogurt and creamy peanut butter, sweetened with honey and frozen for a cool and healthy treat.


Ingredients

  • 2 cups plain Greek yogurt (full-fat recommended)
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips (optional)
  • 1/4 cup chopped peanuts (optional)

Instructions

  1. Line an 8×8 inch baking dish with parchment paper, leaving overhang on the sides for easy removal.
  2. In a large bowl, mix together the Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract until smooth and well combined.
  3. Fold in chocolate chips and chopped peanuts if using.
  4. Spread the mixture evenly in the prepared dish and smooth the top with a spatula.
  5. Freeze for at least 3-4 hours or until completely firm.
  6. Once frozen, lift the mixture out of the dish using the parchment paper and cut into bars.
  7. Store the bars in an airtight container in the freezer.
