Easy and delicious no-bake peanut butter balls made with just a few ingredients—perfect for snacks or holiday treats.
Ingredients
- 1 cup creamy peanut butter
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/2 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil or shortening (optional, for smoother chocolate)
Instructions
- In a large bowl, mix together the peanut butter, softened butter, vanilla extract, and powdered sugar until well combined and smooth.
- Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
- Chill the balls in the refrigerator for at least 30 minutes until firm.
- In a microwave-safe bowl, melt the chocolate chips with coconut oil (if using) in 30-second intervals, stirring in between, until smooth.
- Dip each chilled peanut butter ball into the melted chocolate, coating completely, then return to the parchment paper.
- Chill again until the chocolate is set, about 15–20 minutes.
Notes
- You can use crunchy peanut butter for added texture.
- Store the peanut butter balls in an airtight container in the fridge for up to 2 weeks.
- For a festive touch, sprinkle sea salt or crushed nuts on top before the chocolate sets.
