These Peanut Butter and Jelly Bars combine the nostalgic flavors of a classic PB&J sandwich into a chewy, buttery dessert bar, perfect for lunchboxes and snacking.

- 1 cup peanut butter (smooth or crunchy)
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup fruit jelly or jam (grape, strawberry, or raspberry recommended)
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
- In a large bowl, cream together butter, peanut butter, sugar, and brown sugar until smooth and fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to wet mixture, mixing until just combined.
- Spread about two-thirds of the dough evenly in the prepared baking dish.
- Spoon the jelly evenly over the dough and gently spread with a spatula.
- Drop remaining dough in small clumps over the jelly layer.
- Bake for 30-35 minutes, or until top is golden and edges are set.
- Allow to cool completely in the pan before slicing into bars.
