Description

These Peanut Butter and Jelly Bars combine the nostalgic flavors of a classic PB&J sandwich into a chewy, buttery dessert bar, perfect for lunchboxes and snacking.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup peanut butter (smooth or crunchy)
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup fruit jelly or jam (grape, strawberry, or raspberry recommended)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
  2. In a large bowl, cream together butter, peanut butter, sugar, and brown sugar until smooth and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add dry ingredients to wet mixture, mixing until just combined.
  6. Spread about two-thirds of the dough evenly in the prepared baking dish.
  7. Spoon the jelly evenly over the dough and gently spread with a spatula.
  8. Drop remaining dough in small clumps over the jelly layer.
  9. Bake for 30-35 minutes, or until top is golden and edges are set.
  10. Allow to cool completely in the pan before slicing into bars.
