- 1/2 cup granulated sugar
- 1 tbsp lemon juice
- 2 tbsp cornstarch or all-purpose flour
- Pinch of salt
- 1 cup old-fashioned rolled oats
- 3/4 cup all-purpose flour
- 2/3 cup packed brown sugar
- 1/2 cup cold salted butter, diced
- 1 tsp cinnamon
- 1/4 tsp nutmeg (optional)
Instructions
- Preheat oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
- In a large bowl, toss sliced peaches with granulated sugar, lemon juice, cornstarch (or flour), and a pinch of salt. Transfer to the prepared dish.
- In another bowl, mix oats, flour, brown sugar, cinnamon, and nutmeg if using.
- Cut in the cold butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Sprinkle the oat topping evenly over the peaches.
- Bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbling.
- Let cool slightly before serving. Enjoy warm with vanilla ice cream, if desired.
