Ingredients

1 cup peanut butter (creamy or chunky)

1 1/2 cups sugar (divided)

1 tsp vanilla extract
Instructions

Preheat oven to 350°F (175°C).

In a mixing bowl, combine the peanut butter, 1 cup of sugar, egg, and vanilla extract. Mix well until smooth.

Roll the dough into small balls (about 1 inch) and place them on an ungreased cookie sheet.

Use a fork to press a crisscross pattern onto each cookie, flattening them slightly.

Sprinkle the tops with the remaining 1/2 cup of sugar.

Bake for 10-12 minutes, or until the edges are lightly golden.
