Description

These festive Patriotic Whoopie Pies are soft, cake-like cookie sandwiches filled with creamy frosting and decorated in red, white, and blue – perfect for Fourth of July or Memorial Day celebrations.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/4 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1/2 cup unsalted butter (for filling)
  • 1 1/2 cups powdered sugar
  • 1 (7 oz) jar marshmallow creme
  • Red, white, and blue sprinkles
  • Red and blue food coloring (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, cream together butter and brown sugar until light and fluffy. Add the egg and vanilla extract, mixing well.
  4. Alternate adding the flour mixture and buttermilk to the butter mixture, beginning and ending with the flour mixture. Mix until just combined.
  5. Using a cookie scoop, drop batter onto prepared baking sheets, spacing about 2 inches apart.
  6. Bake for 10-12 minutes or until the tops spring back when touched. Let cool completely on wire racks.
  7. For the filling, beat butter until smooth, then add powdered sugar and beat until fluffy. Fold in marshmallow creme until combined.
  8. Optional: Divide the filling and tint portions red and blue using food coloring.
  9. Pipe or spread filling onto the flat side of half the cookies and top with the remaining cookies to form sandwiches.
  10. Roll the edges in red, white, and blue sprinkles for decoration.

Notes

  • You can make the cookies a day ahead and assemble just before serving.
  • Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
  • Freeze assembled whoopie pies for up to 1 month.
