Description
These festive Patriotic Whoopie Pies are soft, cake-like cookie sandwiches filled with creamy frosting and decorated in red, white, and blue – perfect for Fourth of July or Memorial Day celebrations.

- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 1/4 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1/2 cup unsalted butter (for filling)
- 1 1/2 cups powdered sugar
- 1 (7 oz) jar marshmallow creme
- Red, white, and blue sprinkles
- Red and blue food coloring (optional)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a large bowl, cream together butter and brown sugar until light and fluffy. Add the egg and vanilla extract, mixing well.
- Alternate adding the flour mixture and buttermilk to the butter mixture, beginning and ending with the flour mixture. Mix until just combined.
- Using a cookie scoop, drop batter onto prepared baking sheets, spacing about 2 inches apart.
- Bake for 10-12 minutes or until the tops spring back when touched. Let cool completely on wire racks.
- For the filling, beat butter until smooth, then add powdered sugar and beat until fluffy. Fold in marshmallow creme until combined.
- Optional: Divide the filling and tint portions red and blue using food coloring.
- Pipe or spread filling onto the flat side of half the cookies and top with the remaining cookies to form sandwiches.
- Roll the edges in red, white, and blue sprinkles for decoration.
Notes
- You can make the cookies a day ahead and assemble just before serving.
- Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
- Freeze assembled whoopie pies for up to 1 month.
