Description

Parmesan Smashed Potatoes are crispy on the outside, tender on the inside, and loaded with garlic butter and Parmesan flavor. A perfect side dish that’s simple to prepare and always a crowd-pleaser.


Ingredients

  • 1.5 lbs baby potatoes
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 1/3 cup Parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil baby potatoes in salted water until fork-tender, about 15-20 minutes. Drain well.
  3. Place potatoes on the baking sheet and gently smash each one with the bottom of a glass or potato masher.
  4. Drizzle with olive oil and melted butter. Sprinkle minced garlic over the top.
  5. Season with salt and black pepper. Generously sprinkle grated Parmesan on each potato.
  6. Bake for 20-25 minutes, or until golden and crispy on the edges.
  7. Remove from oven and garnish with chopped fresh parsley before serving.

Notes

  • Swap parsley with rosemary or thyme for an earthy flavor.
  • Add red pepper flakes for a spicy twist.
  • Top with mozzarella or cheddar for a different cheesy variation.
  • Use Pecorino Romano for a saltier, sharper cheese flavor.
