Description
Parmesan Smashed Potatoes are crispy on the outside, tender on the inside, and loaded with garlic butter and Parmesan flavor. A perfect side dish that’s simple to prepare and always a crowd-pleaser.

- 1.5 lbs baby potatoes
- 2 tbsp olive oil
- 2 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1/3 cup Parmesan cheese, grated
- 2 tbsp fresh parsley, chopped
- Salt to taste
- Black pepper to taste
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Boil baby potatoes in salted water until fork-tender, about 15-20 minutes. Drain well.
- Place potatoes on the baking sheet and gently smash each one with the bottom of a glass or potato masher.
- Drizzle with olive oil and melted butter. Sprinkle minced garlic over the top.
- Season with salt and black pepper. Generously sprinkle grated Parmesan on each potato.
- Bake for 20-25 minutes, or until golden and crispy on the edges.
- Remove from oven and garnish with chopped fresh parsley before serving.
Notes
- Swap parsley with rosemary or thyme for an earthy flavor.
- Add red pepper flakes for a spicy twist.
- Top with mozzarella or cheddar for a different cheesy variation.
- Use Pecorino Romano for a saltier, sharper cheese flavor.
- Lemon zest can add a bright, fresh contrast.
