- 2 lbs boneless, skinless chicken thighs
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tbsp honey
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1 tbsp cornstarch
- 2 tbsp water
- 1 tbsp vegetable oil (for grilling)
- Sesame seeds (optional, for garnish)
- Sliced green onions (optional, for garnish)
Instructions
- In a small saucepan, combine soy sauce, brown sugar, honey, rice vinegar, sesame oil, garlic, and ginger. Bring to a simmer over medium heat.
- In a small bowl, mix cornstarch and water until smooth, then stir into the saucepan. Cook until the sauce thickens, about 2-3 minutes. Set aside.
- Heat a grill or skillet over medium-high heat and add vegetable oil.
- Grill the chicken thighs for about 6-7 minutes per side, or until fully cooked and slightly charred.
- Brush the thickened teriyaki sauce generously over the chicken during the last few minutes of cooking.
- Remove the chicken from the heat and let rest for a few minutes before slicing.
- Serve hot with extra teriyaki sauce drizzled on top. Garnish with sesame seeds and green onions if desired.
Notes
- Marinate the chicken for extra flavor before grilling, although it’s not necessary.
- The sauce can be made ahead and stored in the fridge for up to a week.
