Description

One-Pot Marry Me Chicken Pasta is a creamy, flavorful dish made with sun-dried tomatoes, garlic, and tender chicken breast all cooked in one pot for easy cleanup and maximum flavor.


Ingredients

  • 2 tablespoons olive oil
  • 2 chicken breasts, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne pasta
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh basil, for garnish

Instructions

  1. Heat olive oil in a large skillet or pot over medium heat.
  2. Season the sliced chicken breasts with salt, pepper, and paprika. Add to the pot and cook until browned and cooked through. Remove and set aside.
  3. In the same pot, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  4. Add chicken broth, heavy cream, and pasta. Stir well and bring to a boil.
  5. Reduce heat to a simmer, cover, and cook for about 10-12 minutes or until the pasta is al dente.
  6. Stir in Parmesan cheese and Italian seasoning. Return the cooked chicken to the pot and mix well.
  7. Simmer for another 2-3 minutes until the sauce thickens and the flavors combine.
  8. Garnish with fresh basil and serve warm.

Notes

  • You can substitute chicken thighs for chicken breasts for a juicier option.
  • Use sun-dried tomatoes packed in oil for extra flavor.
  • Adjust creaminess by adding more or less heavy cream.
  • Add crushed red pepper flakes for a spicy kick.
