Instructions
- Prepare Chicken: Season chicken with salt, pepper, and Italian seasoning. Sear in olive oil until golden. Set aside.
- Sauté Vegetables: In the same skillet, sauté onion, garlic, and red bell pepper until softened.
- Add Ingredients: Stir in diced tomatoes, broth, rice, oregano, and red pepper flakes. Return chicken to the skillet.
- Cook: Bring to a boil, then simmer covered for 18–20 minutes until rice is tender.
- Finish: Stir in Parmesan, let sit covered, then garnish with fresh basil before serving.
Notes
- You can substitute brown rice, but increase the broth to 2 cups and cooking time to about 40 minutes.
