Description

A hearty and comforting one-pot creamy sausage and potato soup made with flavorful sausage, tender potatoes, and a rich, creamy broth. Perfect for a cozy weeknight dinner.


Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 1/2 lbs potatoes, peeled and diced
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 cups chopped spinach or kale
  • Grated Parmesan cheese for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it up with a spoon.
  2. Add diced onion and garlic. Cook until the onion is translucent, about 5 minutes.
  3. Pour in chicken broth and add the diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. Stir in heavy cream, sour cream, thyme, and red pepper flakes if using. Simmer for another 5 minutes.
  5. Add chopped spinach or kale and cook until wilted, about 2-3 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with grated Parmesan cheese if desired.

Notes

  • For a lighter version, substitute half-and-half for heavy cream.
  • You can use any type of sausage, including turkey or chicken sausage.
  • Leftovers can be stored in the refrigerator for up to 3 days.
