- 1 lb Italian sausage (mild or spicy)
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 1/2 lbs potatoes, peeled and diced
- 1 cup heavy cream
- 1/2 cup sour cream
- 1 teaspoon dried thyme
- 1/2 teaspoon crushed red pepper flakes (optional)
- Salt and pepper to taste
- 2 cups chopped spinach or kale
- Grated Parmesan cheese for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it up with a spoon.
- Add diced onion and garlic. Cook until the onion is translucent, about 5 minutes.
- Pour in chicken broth and add the diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Stir in heavy cream, sour cream, thyme, and red pepper flakes if using. Simmer for another 5 minutes.
- Add chopped spinach or kale and cook until wilted, about 2-3 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with grated Parmesan cheese if desired.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- You can use any type of sausage, including turkey or chicken sausage.
- Leftovers can be stored in the refrigerator for up to 3 days.
