- 1 lb smoked sausage, sliced
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 8 oz penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup diced tomatoes (canned or fresh)
- 1/2 cup chopped spinach (optional)
- Salt to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet or pot over medium heat.
- Add the sliced sausage and cook until browned, about 5 minutes.
- Add the diced onion and cook until softened, about 3 minutes.
- Stir in the garlic, Cajun seasoning, paprika, and black pepper. Cook for 1 minute until fragrant.
- Add the uncooked pasta, chicken broth, and diced tomatoes. Stir to combine.
- Bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes, or until pasta is cooked.
- Stir in the heavy cream, Parmesan cheese, and spinach (if using). Cook uncovered for 2-3 minutes until the sauce thickens.
- Season with salt to taste and garnish with fresh parsley before serving.
