Ingredients
-
1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
-
Salt and pepper, to taste
-
1 tbsp olive oil
-
3 cloves garlic, minced
-
2 cups marinara sauce
-
2 1/2 cups chicken broth
-
2 cups uncooked elbow macaroni (or small pasta of choice)
-
1/2 cup heavy cream (or milk for lighter version)
-
1 1/2 cups shredded mozzarella cheese
-
1/2 cup grated Parmesan cheese
-
1/2 tsp dried Italian seasoning
-
1/4 tsp red pepper flakes (optional)
-
1/2 cup seasoned breadcrumbs (optional topping)
-
Fresh basil or parsley, chopped (for garnish)
Instructions
-
In a large deep skillet or pot, heat olive oil over medium heat. Season chicken with salt and pepper, then cook until browned and cooked through, about 5–6 minutes. Remove and set aside.
-
In the same pot, add garlic and sauté for 30 seconds. Stir in marinara sauce and chicken broth, then bring to a simmer.
-
Add uncooked pasta, stir, and let it simmer uncovered for about 10–12 minutes, stirring occasionally, until pasta is tender.
-
Reduce heat to low. Stir in heavy cream, cooked chicken, mozzarella, Parmesan, Italian seasoning, and red pepper flakes (if using). Mix until creamy and fully combined.
-
(Optional) Sprinkle breadcrumbs over the top and broil for 2–3 minutes for a crispy topping.
-
Garnish with fresh basil or parsley and serve hot!
Notes
-
Swap in ground chicken or rotisserie chicken for a shortcut.
-
Use gluten-free pasta and breadcrumbs to make it gluten-free.
-
Add spinach or chopped zucchini for extra veggies.
