Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, diced
- 2 cups broccoli florets
- 3 cloves garlic, minced
- 3 cups chicken broth
- 1 cup heavy cream
- 8 ounces fettuccine or penne pasta
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 tablespoon butter (optional for added richness)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned and cooked through.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and heavy cream, then add pasta. Stir to combine.
- Bring to a boil, reduce heat to a simmer, and cover. Cook for 10 minutes, stirring occasionally.
- Add broccoli florets and continue cooking uncovered for 5–7 minutes until pasta is al dente and broccoli is tender.
- Stir in Parmesan cheese and butter (if using) until melted and the sauce is creamy.
- Season with salt and pepper to taste. Serve warm.
