Description

This One Pot Chicken Broccoli Alfredo is a creamy, comforting pasta dish made with tender chicken, fresh broccoli, and a rich Alfredo sauce—all cooked in a single pot for easy cleanup.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, diced
  • 2 cups broccoli florets
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 8 ounces fettuccine or penne pasta
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tablespoon butter (optional for added richness)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned and cooked through.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Pour in chicken broth and heavy cream, then add pasta. Stir to combine.
  4. Bring to a boil, reduce heat to a simmer, and cover. Cook for 10 minutes, stirring occasionally.
  5. Add broccoli florets and continue cooking uncovered for 5–7 minutes until pasta is al dente and broccoli is tender.
  6. Stir in Parmesan cheese and butter (if using) until melted and the sauce is creamy.
  7. Season with salt and pepper to taste. Serve warm.

Notes

  • You can substitute the broccoli with other vegetables like spinach or peas.
  • Use rotisserie chicken to save time on prep.
  • Adjust the amount of cream or cheese for your preferred consistency and richness.
