- 2 cups uncooked pasta (like rotini or penne)
- 1 cup shredded cheddar cheese
- 1 tbsp olive oil
- Salt and pepper to taste
- Optional toppings: sour cream, chopped cilantro, sliced green onions
Instructions
- In a large pot or skillet, heat olive oil over medium heat. Add diced onion and cook until translucent, about 3-4 minutes.
- Add the garlic and ground beef, cooking until the beef is browned and fully cooked. Drain excess fat if needed.
- Stir in the taco seasoning, diced tomatoes, salsa, and beef broth.
- Add the uncooked pasta and bring the mixture to a boil.
- Reduce heat to a simmer, cover, and cook for about 12-15 minutes, or until the pasta is tender, stirring occasionally.
- Remove the lid, stir in shredded cheddar cheese, and cook until melted and incorporated.
- Season with salt and pepper to taste. Garnish with desired toppings before serving.
