Description

One Pot Beef Taco Pasta is a quick and flavorful dinner that combines seasoned ground beef, pasta, taco spices, and cheese all cooked in one pan for a hearty and satisfying meal.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 2 cups beef broth
  • 1 (15 oz) can diced tomatoes
  • 1 cup salsa
  • 2 cups uncooked pasta (like rotini or penne)
  • 1 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional toppings: sour cream, chopped cilantro, sliced green onions

Instructions

  1. In a large pot or skillet, heat olive oil over medium heat. Add diced onion and cook until translucent, about 3-4 minutes.
  2. Add the garlic and ground beef, cooking until the beef is browned and fully cooked. Drain excess fat if needed.
  3. Stir in the taco seasoning, diced tomatoes, salsa, and beef broth.
  4. Add the uncooked pasta and bring the mixture to a boil.
  5. Reduce heat to a simmer, cover, and cook for about 12-15 minutes, or until the pasta is tender, stirring occasionally.
  6. Remove the lid, stir in shredded cheddar cheese, and cook until melted and incorporated.
  7. Season with salt and pepper to taste. Garnish with desired toppings before serving.
