Description

A delicious and healthy Mediterranean-inspired chicken meal made in one pan, featuring seasoned chicken thighs, fresh vegetables, and savory toppings like olives and feta cheese.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken thighs with oregano, thyme, salt, and pepper.
  3. Heat olive oil in an ovenproof skillet over medium-high heat. Sear chicken thighs skin-side down for 5-6 minutes until golden. Flip and cook 2 more minutes.
  4. Remove chicken and set aside. Add peppers and onion to the skillet and sauté for 4-5 minutes.
  5. Add garlic, cherry tomatoes, and olives, then return chicken to the skillet.
  6. Transfer the skillet to the oven and bake for 20-25 minutes, until chicken reaches 165°F (74°C).
  7. Remove from oven and sprinkle with feta, lemon juice, and parsley.
  8. Serve warm with juices from the pan.

Notes

  • Bone-in chicken breasts can be used instead of thighs with adjusted cooking time.
  • Great served with rice, couscous, or crusty bread.
  • Optional: add zucchini or artichoke hearts for extra vegetables.
  • Store leftovers in an airtight container for up to 3 days.
