Description

A flavorful and easy one-pan meal featuring tender balsamic-glazed chicken with vegetables, perfect for a quick and healthy dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1/3 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cup green beans, trimmed
  • 1 red onion, sliced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, whisk together balsamic vinegar, honey, oregano, garlic powder, salt, and pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Add chicken breasts and sear for 2-3 minutes on each side until golden brown.
  5. Remove skillet from heat and pour balsamic mixture over the chicken.
  6. Add cherry tomatoes, green beans, and red onion around the chicken in the skillet.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until chicken is cooked through and vegetables are tender.
  8. Remove from oven, spoon some of the pan sauce over the chicken, and serve warm.

Notes

  • Use bone-in chicken thighs for a juicier option; adjust cook time as needed.
  • Add other vegetables like bell peppers or asparagus for variety.
  • Marinate the chicken for a few hours for even deeper flavor.
