- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1/3 cup balsamic vinegar
- 2 tablespoons honey
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1 cup green beans, trimmed
- 1 red onion, sliced
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, whisk together balsamic vinegar, honey, oregano, garlic powder, salt, and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Add chicken breasts and sear for 2-3 minutes on each side until golden brown.
- Remove skillet from heat and pour balsamic mixture over the chicken.
- Add cherry tomatoes, green beans, and red onion around the chicken in the skillet.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until chicken is cooked through and vegetables are tender.
- Remove from oven, spoon some of the pan sauce over the chicken, and serve warm.

- Use bone-in chicken thighs for a juicier option; adjust cook time as needed.
- Add other vegetables like bell peppers or asparagus for variety.
- Marinate the chicken for a few hours for even deeper flavor.
