Description

A comforting and hearty Southern classic, Old Fashioned Chicken and Dumplings features tender chicken stewed with fluffy dumplings in a rich, savory broth.


Ingredients

  • 1 whole chicken (about 34 pounds), cut into pieces
  • 8 cups water
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 2 bay leaves
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt (for dumplings)
  • 3 tbsp unsalted butter
  • 3/4 cup milk
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. In a large pot, combine chicken, water, onion, garlic, carrots, celery, bay leaves, salt, pepper, and thyme. Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until chicken is tender.
  2. Remove the chicken from the pot, let cool slightly, then shred the meat. Discard bones and skin.
  3. Strain the broth to remove vegetables and bay leaves, then return the broth to the pot. Add shredded chicken back to the pot.
  4. In a bowl, mix flour, baking powder, and salt for the dumplings. Cut in butter until crumbly, then stir in milk until a dough forms.
  5. Drop spoonfuls of the dough into the simmering broth. Cover and simmer for 15-20 minutes, or until dumplings are cooked through.
  6. Optional: sprinkle with fresh parsley before serving.

Notes

  • For a richer flavor, use chicken stock instead of water.
  • Add peas or corn for extra vegetables.
  • Do not lift the lid while dumplings are cooking to ensure they cook evenly.
