Description

A chewy, nostalgic cookie featuring rolled oats, plump raisins, and warm cinnamon spice with a crisp edge and soft center.

Ingredients

Scale
  • 1 cup old-fashioned rolled oats
  • 3/4 cup purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 2/3 cup raisins

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the butter, brown sugar, and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until fully combined.
  4. In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just incorporated.
  6. Stir in the oats and raisins until evenly distributed.
  7. Scoop the dough onto the prepared baking sheet, spacing about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
  9. Let the cookies cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Add chopped walnuts or pecans for extra crunch.
  • Substitute chocolate chips for raisins for a different twist.
  • Use quick oats for a softer texture.
  • Mix in shredded coconut for added chewiness.
