Description

Light and airy choux-style pastries baked in a muffin tin, crisp on the outside and tender inside, traditionally sweetened with sugar and drizzled with honey.


Ingredients

  • 1/2 cup unsalted butter
  • 1 cup whole milk
  • 3/4 cup all-purpose flour
  • 4 large eggs
  • 1 tbsp granulated sugar (optional)
  • Additional granulated sugar for sprinkling
  • Honey or whipped cream for serving (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Generously grease a 12-cup muffin pan.
  2. In a saucepan, melt butter over medium heat. Add milk and bring to a boil.
  3. Reduce heat to low and add flour all at once. Stir vigorously until mixture forms a smooth ball and pulls away from the sides of the pan.
  4. Remove from heat and let cool for 5 minutes.
  5. Beat in eggs one at a time, fully incorporating each before adding the next. Stir in sugar if using.
  6. Spoon batter evenly into muffin cups, filling each about 2/3 full. Sprinkle tops with sugar.
  7. Bake for 30 minutes, or until golden brown and puffed. Do not open the oven during baking.
  8. Remove from pan and cool slightly on a wire rack. Serve warm, optionally drizzled with honey or topped with whipped cream.

Notes

  • Use room temperature eggs to help incorporate them smoothly into the batter.
  • Do not open the oven while baking, as this may cause the puffs to collapse.
  • These are best served fresh, but can be reheated in the oven for a few minutes.
  • Can also be served with a dusting of powdered sugar or fruit preserves.
