Description

Soft and chewy no-bake granola bars made with oats, nut butter, and sweeteners, perfect for a healthy, grab-and-go snack.


Ingredients

  • 2 cups old-fashioned rolled oats
  • 1/2 cup honey or maple syrup
  • 1/2 cup nut butter (such as peanut butter or almond butter)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/3 cup mini chocolate chips
  • 1/3 cup dried fruits (e.g., cranberries or raisins)
  • 1/4 cup chopped nuts or seeds (optional)

Instructions

  1. Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a saucepan over low heat, combine the honey and nut butter. Stir continuously until melted and smooth.
  3. Remove from heat and stir in vanilla extract and salt.
  4. In a large bowl, mix oats, dried fruits, and nuts or seeds if using.
  5. Pour the warm honey mixture over the dry ingredients and stir until evenly combined.
  6. Let the mixture cool slightly, then fold in chocolate chips to prevent melting.
  7. Transfer the mixture into the prepared dish and press down firmly using a spatula or parchment paper.
  8. Refrigerate for at least 1–2 hours, or until firm.
  9. Lift from the pan using the parchment overhang and cut into bars.

  • Add shredded coconut or chia seeds for extra texture.
