Description

A rich, savory sauce loaded with umami flavor from mushrooms and aromatic herbs. Perfect over mashed potatoes, roast meats, or as a vegetarian topping.


Ingredients

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 16 oz mushrooms, sliced (cremini, white button, or mixed)
  • 2 cups low-sodium vegetable or beef broth
  • 2 tbsp all-purpose flour
  • 1 tbsp soy sauce
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • Salt and black pepper to taste
  • Optional: 2 tbsp heavy cream or milk

Instructions

  1. In a large skillet, heat butter and olive oil over medium heat.
  2. Add chopped onions and sauté until translucent, about 5 minutes.
  3. Stir in garlic and cook for another minute until fragrant.
  4. Add sliced mushrooms and cook until they release moisture and become golden brown, about 10 minutes.
  5. Sprinkle flour over mushrooms and stir well to coat.
  6. Gradually whisk in the broth to avoid lumps.
  7. Add soy sauce, thyme, salt, and pepper. Simmer for 5–7 minutes until the gravy thickens.
  8. (Optional) Stir in heavy cream or milk for creaminess.
  9. Adjust seasoning as needed. Serve hot.
