- 2 cloves garlic, minced
- 16 oz mushrooms, sliced (cremini, white button, or mixed)
- 2 cups low-sodium vegetable or beef broth
- 2 tbsp all-purpose flour
- 1 tbsp soy sauce
- 1 tsp fresh thyme (or 1/2 tsp dried thyme)
- Salt and black pepper to taste
- Optional: 2 tbsp heavy cream or milk
Instructions
- In a large skillet, heat butter and olive oil over medium heat.
- Add chopped onions and sauté until translucent, about 5 minutes.
- Stir in garlic and cook for another minute until fragrant.
- Add sliced mushrooms and cook until they release moisture and become golden brown, about 10 minutes.
- Sprinkle flour over mushrooms and stir well to coat.
- Gradually whisk in the broth to avoid lumps.
- Add soy sauce, thyme, salt, and pepper. Simmer for 5–7 minutes until the gravy thickens.
- (Optional) Stir in heavy cream or milk for creaminess.
- Adjust seasoning as needed. Serve hot.
