- 1 scoop vanilla protein powder
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 cups unsweetened almond milk
- 2 large eggs
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 2 cups mixed berries (fresh or frozen)
- 1 tablespoon coconut oil (for greasing)
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish with coconut oil.
- In a large bowl, mix together the oats, protein powder, baking powder, cinnamon, and salt.
- In another bowl, whisk together the almond milk, eggs, maple syrup, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- Fold in the mixed berries.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 35-40 minutes, or until the top is golden and the center is set.
- Let cool slightly before slicing and serving.
Notes
- Use any combination of berries you like—blueberries, raspberries, blackberries, or strawberries work well.
- Can be stored in the fridge for up to 5 days or frozen for longer storage.
