- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/3 cup vegetable oil
- 1 large egg
- 1/3 – 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 1/2 cups mixed berries (fresh or frozen)
- 1 tablespoon all-purpose flour (for tossing berries)
Instructions
- Preheat oven to 400°F (200°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, salt, and baking powder.
- In a separate bowl, mix vegetable oil, egg, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Toss the berries with 1 tablespoon of flour and gently fold them into the batter.
- Divide the batter evenly among muffin cups, filling about 3/4 full.
- Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
- Let muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- You can use fresh or frozen berries; no need to thaw frozen berries.
- Don’t overmix the batter to keep muffins light and fluffy.
- Optional: sprinkle sugar on top before baking for a sweet crust.
