- 1 cup peanut butter
- 2 tablespoons white miso paste
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 1/2 cups dark chocolate, chopped
- 2 tablespoons coconut oil
- Pinch of sea salt
Instructions
- Line an 8×8-inch baking dish with parchment paper.
- In a saucepan over low heat, combine peanut butter, miso paste, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.
- Remove from heat and gently fold in the cornflakes until evenly coated.
- Press the mixture firmly into the prepared dish in an even layer.
- In a microwave-safe bowl or over a double boiler, melt the dark chocolate with coconut oil until smooth.
- Pour the chocolate mixture over the cornflake base and spread evenly.
- Sprinkle with a pinch of sea salt.
- Refrigerate for at least 2 hours or until fully set.
- Lift out of the pan using parchment and cut into bars.
