Description

This fresh and easy strawberry spinach salad comes together in just a few minutes! Sweet strawberries, crisp spinach, and crunchy nuts are tossed in a light balsamic dressing. It’s a simple, healthy side dish or light lunch that’s packed with flavor and perfect for spring and summer.


Ingredients

  • 6 cups fresh baby spinach

  • 1 cup sliced fresh strawberries

  • 1/4 red onion, thinly sliced

  • 1/4 cup crumbled feta cheese

  • 1/4 cup chopped walnuts or sliced almonds

  • 2 tablespoons balsamic vinegar

  • 1 tablespoon olive oil

  • 1 teaspoon honey (optional)

 

  • Salt and pepper, to taste


Instructions

  • In a large bowl, combine spinach, strawberries, red onion, feta cheese, and nuts.

  • In a small bowl or jar, whisk together balsamic vinegar, olive oil, honey (if using), salt, and pepper.

  • Drizzle the dressing over the salad just before serving and toss gently to coat.

 

  • Serve immediately.


Notes

  • Add grilled chicken to make it a full meal.

  • Swap feta with goat cheese if you prefer.

  • You can use pecans or sunflower seeds instead of walnuts or almonds.

 

  • For extra flavor, try a strawberry balsamic glaze
