- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded cheddar cheese (optional)
- 1/4 cup ketchup (for topping)
- 1 tbsp brown sugar (for topping)
- 1 tsp mustard (for topping)
Instructions
- Preheat oven to 375°F (190°C). Grease a muffin tin or line with muffin liners.
- In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, and cheese (if using). Mix until just combined.
- Divide the mixture evenly into 8 muffin cups, pressing down lightly.
- In a small bowl, mix 1/4 cup ketchup, brown sugar, and mustard. Spoon over each mini meatloaf.
- Bake for 25–30 minutes or until internal temperature reaches 160°F (71°C).
- Let rest for 5 minutes before serving.
Notes
- You can use ground turkey or chicken instead of beef for a lighter option.
- Add finely chopped veggies like carrots or bell peppers for extra nutrition.
- Leftovers can be stored in the fridge for up to 3 days or frozen for longer storage.
