Ingredients
For the Meatballs:
-
1 lb ground beef
-
1/2 cup breadcrumbs
-
1/4 cup grated Parmesan cheese
-
1 egg
-
2 cloves garlic, minced
-
1/4 cup chopped parsley
-
1/2 tsp salt
-
1/4 tsp black pepper
For the Subs:
-
12 mini sub rolls or slider buns
-
2 cups marinara sauce
-
1 1/2 cups shredded mozzarella cheese
-
1 tbsp olive oil (for cooking meatballs)
-
Extra chopped parsley for garnish (optional)
Instructions
-
Make the Meatballs: In a large bowl, mix ground beef, breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper. Form into small meatballs (about 1 inch wide).
-
Cook the Meatballs: Heat olive oil in a skillet over medium heat. Add meatballs and cook for 6–8 minutes, turning to brown all sides.
-
Add Sauce: Pour marinara sauce over the meatballs. Cover and let simmer for 10 minutes until meatballs are cooked through.
-
Assemble Subs: Preheat oven to 375°F (190°C). Place open mini rolls on a baking sheet. Add 2–3 meatballs to each roll, spoon over extra sauce, and sprinkle with mozzarella cheese.
-
Bake: Bake for 8–10 minutes or until cheese is melted and bubbly.
-
Serve: Garnish with chopped parsley if desired and serve warm.
Notes
-
You can use store-bought frozen meatballs to save time—just heat them in the sauce.
-
Add a little chili flake or hot sauce to the marinara if you like some heat.
-
These are great for meal prep—just store leftovers in the fridge and reheat in the oven.
