Description

These Mini Bean and Cheese Quesadillas are a quick, kid-friendly snack or meal option made with simple ingredients and ready in minutes.


Ingredients

  • 1 cup canned refried beans
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon ground cumin (optional)
  • 1/2 teaspoon garlic powder (optional)
  • 4 medium flour tortillas
  • 1 tablespoon vegetable oil or butter (for cooking)

Instructions

  1. In a small bowl, mix refried beans with cumin and garlic powder if using.
  2. Spread a thin layer of the bean mixture over half of each tortilla.
  3. Sprinkle shredded cheddar cheese evenly over the beans.
  4. Fold each tortilla in half to create a half-moon shape.
  5. Heat oil or butter in a large skillet over medium heat.
  6. Place the folded tortillas in the skillet and cook for 2-3 minutes per side or until golden and the cheese is melted.
  7. Remove from skillet and let cool slightly before cutting into smaller wedges if desired.
