Description

A rich and indulgent layered treat with a buttery shortbread base, a gooey caramel center, and a smooth chocolate top.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (shortbread)
  • 1/2 cup unsalted butter (caramel)
  • 1 (14-ounce) can sweetened condensed milk
  • 2 tablespoons golden syrup or light corn syrup
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup semisweet or dark chocolate chips or chopped chocolate

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. For the shortbread layer, cream together 1/2 cup butter and 1/4 cup sugar until light and fluffy. Mix in 1 cup flour until a crumbly dough forms.
  3. Press the dough into the prepared pan and bake for 20–25 minutes, or until lightly golden. Let it cool completely.
  4. In a saucepan, combine 1/2 cup butter, sweetened condensed milk, golden syrup, and salt. Cook over medium heat, stirring constantly, until the mixture thickens and turns golden (about 10–15 minutes).
  5. Remove from heat, stir in vanilla extract, and pour over the cooled shortbread. Smooth and let set.
  6. Melt chocolate using a double boiler or microwave, then pour and spread evenly over the caramel layer.
  7. Let the chocolate set completely before slicing into bars.

Notes

  • Use milk chocolate instead of dark for a sweeter flavor.
  • Top with sea salt for a salted caramel version.
  • Try adding nuts or crushed pretzels between caramel and chocolate for crunch.
  • Infuse caramel with espresso powder or cinnamon for extra depth.
