- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter (shortbread)
- 1/2 cup unsalted butter (caramel)
- 1 (14-ounce) can sweetened condensed milk
- 2 tablespoons golden syrup or light corn syrup
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup semisweet or dark chocolate chips or chopped chocolate
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- For the shortbread layer, cream together 1/2 cup butter and 1/4 cup sugar until light and fluffy. Mix in 1 cup flour until a crumbly dough forms.
- Press the dough into the prepared pan and bake for 20–25 minutes, or until lightly golden. Let it cool completely.
- In a saucepan, combine 1/2 cup butter, sweetened condensed milk, golden syrup, and salt. Cook over medium heat, stirring constantly, until the mixture thickens and turns golden (about 10–15 minutes).
- Remove from heat, stir in vanilla extract, and pour over the cooled shortbread. Smooth and let set.
- Melt chocolate using a double boiler or microwave, then pour and spread evenly over the caramel layer.
- Let the chocolate set completely before slicing into bars.
Notes
- Use milk chocolate instead of dark for a sweeter flavor.
- Top with sea salt for a salted caramel version.
- Try adding nuts or crushed pretzels between caramel and chocolate for crunch.
- Infuse caramel with espresso powder or cinnamon for extra depth.
