Description
Mexican Street Corn, or Elote, is a deliciously messy and flavorful street food featuring grilled corn slathered in a creamy, tangy sauce with chili, lime, and cotija cheese.

- 4 ears of corn, husked
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled cotija cheese
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1 tablespoon chopped fresh cilantro (optional)
- Lime wedges, for serving
Instructions
- Preheat grill to medium-high heat. Grill corn for 10–12 minutes, turning occasionally, until lightly charred and cooked through.
- In a small bowl, mix mayonnaise, sour cream, lime juice, chili powder, and garlic powder.
- Once corn is grilled, brush each ear generously with the sauce mixture.
- Sprinkle crumbled cotija cheese over the top and garnish with chopped cilantro if desired.
- Serve immediately with lime wedges on the side.
Notes
- If cotija cheese is unavailable, feta or Parmesan can be used as a substitute.
- For extra kick, add a dash of hot sauce to the sauce mixture.
- This can also be made with frozen corn kernels and served as a salad (Esquites).
