Description

Mexican Street Corn, or Elote, is a deliciously messy and flavorful street food featuring grilled corn slathered in a creamy, tangy sauce with chili, lime, and cotija cheese.


Ingredients

  • 4 ears of corn, husked
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1 tablespoon chopped fresh cilantro (optional)
  • Lime wedges, for serving

Instructions

  1. Preheat grill to medium-high heat. Grill corn for 10–12 minutes, turning occasionally, until lightly charred and cooked through.
  2. In a small bowl, mix mayonnaise, sour cream, lime juice, chili powder, and garlic powder.
  3. Once corn is grilled, brush each ear generously with the sauce mixture.
  4. Sprinkle crumbled cotija cheese over the top and garnish with chopped cilantro if desired.
  5. Serve immediately with lime wedges on the side.

Notes

  • If cotija cheese is unavailable, feta or Parmesan can be used as a substitute.
  • For extra kick, add a dash of hot sauce to the sauce mixture.
  • This can also be made with frozen corn kernels and served as a salad (Esquites).
