Description

Mexican Pinwheels are a delicious and easy-to-make appetizer featuring a creamy, spicy filling rolled in soft tortillas. Perfect for parties, potlucks, or quick snacks.


Ingredients

  • 4 large flour tortillas
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped black olives
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped green onions
  • 1/2 cup drained canned corn
  • 1/2 tsp garlic powder
  • 1/2 tsp ground cumin
  • 1/4 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the cream cheese and sour cream until smooth.
  2. Stir in the shredded cheddar cheese, black olives, red bell pepper, green onions, and corn.
  3. Add garlic powder, cumin, chili powder, salt, and pepper. Mix well to combine.
  4. Spread the mixture evenly over each tortilla.
  5. Roll up the tortillas tightly and wrap them in plastic wrap.
  6. Refrigerate for at least 1 hour to firm up.
  7. Slice into 1-inch pinwheels and serve chilled.

Notes

  • You can make these up to 24 hours ahead for best flavor.
  • For a spicier version, add diced jalapeños to the filling.
  • Use spinach or tomato tortillas for extra color and flavor.
