  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup salsa
  • 2 tablespoons chopped fresh cilantro
  • sour cream for serving

Instructions

  1. Preheat oven to 375°F: In a skillet over medium heat, warm the olive oil and cook the ground beef until browned, breaking it apart as it cooks.
  2. Add onion and garlic: Cook until softened, about 3 minutes. Stir in taco seasoning, cumin, chili powder, salt, and pepper. Cook for another 1–2 minutes, then remove from heat.
  3. Fill tortillas: Lay the tortillas flat and divide the beef mixture evenly among them, placing it on one half of each tortilla. Sprinkle with cheeses, spoon over salsa, and fold the tortillas in half.
  4. Bake: Place the filled tortillas on a baking sheet, brush with olive oil, and bake for 8–10 minutes, flipping halfway, until golden and crisp.
  5. Serve: Cut each tortilla into wedges, sprinkle with cilantro, and serve warm with sour cream.
