Ingredients

1 bunch curly kale, stems removed and chopped

1 tbsp olive oil (for massaging the kale)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, thinly sliced

1/2 cup Kalamata olives, sliced

1/2 cup crumbled feta cheese

1/4 cup fresh parsley, chopped
For the Dressing:

3 tbsp extra virgin olive oil

2 tbsp fresh lemon juice

1 garlic clove, minced

1 tsp Dijon mustard

1/2 tsp dried oregano

Salt and pepper to taste
Instructions

Place chopped kale in a large bowl. Drizzle with 1 tablespoon of olive oil and massage with your hands for 2-3 minutes until softened.

Add cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley to the bowl with kale.

In a small bowl or jar, whisk together the dressing ingredients: olive oil, lemon juice, garlic, Dijon mustard, oregano, salt, and pepper.
