  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, cut into wedges
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced

Seasonings:

  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Additional:

  • 8 oz halloumi cheese, sliced
  • 2 tablespoons chopped fresh parsley or basil for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare vegetables: In a large mixing bowl, combine zucchini, bell peppers, onion, cherry tomatoes, and garlic. Drizzle with olive oil and season with oregano, thyme, salt, and pepper. Toss to coat.
