- 1 medium zucchini, sliced into half-moons
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, cut into wedges
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
Seasonings:
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Additional:
- 8 oz halloumi cheese, sliced
- 2 tablespoons chopped fresh parsley or basil for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C).
- Prepare vegetables: In a large mixing bowl, combine zucchini, bell peppers, onion, cherry tomatoes, and garlic. Drizzle with olive oil and season with oregano, thyme, salt, and pepper. Toss to coat.
- Roast vegetables: Spread the vegetables on a baking dish and roast for 20 minutes.
- Add halloumi: Place halloumi slices on top of the vegetables and bake for an additional 10–15 minutes until golden.
- Garnish and serve: Garnish with fresh herbs and serve warm.
