These juicy Mediterranean Chicken Patties are packed with fresh herbs, sun-dried tomatoes, feta cheese, and garlic. They’re quick to make and perfect for a light lunch, easy dinner, or healthy meal prep. Serve with a side salad, in a pita, or over rice for a wholesome meal full of flavor!
Ingredients

1 lb ground chicken

1/4 cup sun-dried tomatoes, finely chopped

1/4 cup crumbled feta cheese

2 cloves garlic, minced

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

1 egg

1/4 cup breadcrumbs (or almond flour for gluten-free)

1 tbsp olive oil (for cooking)
Instructions

In a large bowl, mix together the ground chicken, sun-dried tomatoes, feta, garlic, onion, parsley, dill, oregano, salt, pepper, egg, and breadcrumbs until well combined.

Shape the mixture into 6–8 patties.

Heat olive oil in a skillet over medium heat.

Cook the patties for about 4–5 minutes per side, or until golden brown and cooked through (internal temp should reach 165°F).

Serve warm with tzatziki, salad, or inside a pita.
Notes

For a low-carb version, use almond flour instead of breadcrumbs.

These patties freeze well. Let them cool, then freeze in an airtight container for up to 3 months.
