Description
Mashed Potato Cups are individual servings of creamy mashed potatoes baked in muffin tins with cheese and toppings, perfect as a fun side dish or party snack.

- 4 cups mashed potatoes (prepared and cooled)
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/4 cup sour cream
- 1/4 cup chopped green onions
- Salt and pepper to taste
- Non-stick cooking spray
Instructions
- Preheat oven to 375°F (190°C) and spray a muffin tin with non-stick cooking spray.
- In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan, eggs, sour cream, green onions, salt, and pepper. Mix well.
- Spoon the mixture into the muffin tin, filling each cup almost to the top and smoothing the surface.
- Bake for 20–25 minutes or until the tops are golden brown and the cups are set.
- Allow to cool for 5 minutes before removing from the tin. Serve warm.
Notes
- You can add bacon bits or cooked vegetables for extra flavor.
- Best served warm, but can be reheated in the oven or microwave.
- Use leftover mashed potatoes for a quick prep.
