Description

Mashed Potato Cups are individual servings of creamy mashed potatoes baked in muffin tins with cheese and toppings, perfect as a fun side dish or party snack.


Ingredients

  • 4 cups mashed potatoes (prepared and cooled)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup sour cream
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Non-stick cooking spray

Instructions

  1. Preheat oven to 375°F (190°C) and spray a muffin tin with non-stick cooking spray.
  2. In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan, eggs, sour cream, green onions, salt, and pepper. Mix well.
  3. Spoon the mixture into the muffin tin, filling each cup almost to the top and smoothing the surface.
  4. Bake for 20–25 minutes or until the tops are golden brown and the cups are set.
  5. Allow to cool for 5 minutes before removing from the tin. Serve warm.

Notes

  • You can add bacon bits or cooked vegetables for extra flavor.
  • Best served warm, but can be reheated in the oven or microwave.
  • Use leftover mashed potatoes for a quick prep.
