- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tbsp butter
- 3 cloves garlic, minced
- 1 cup chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup chopped sun-dried tomatoes (in oil, drained)
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- Fresh basil or parsley for garnish (optional)
Instructions
- Season the chicken breasts with salt, pepper, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 4-5 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add butter and minced garlic. Sauté for about 1 minute until fragrant.
- Pour in chicken broth and stir to deglaze the pan.
- Add heavy cream, Parmesan cheese, sun-dried tomatoes, thyme, oregano, and red pepper flakes. Stir and bring to a simmer.
- Let the sauce cook for 5 minutes, stirring occasionally, until it thickens slightly.
- Return the chicken to the skillet and coat with the sauce. Simmer for another 5-7 minutes until the chicken is heated through.
- Garnish with fresh basil or parsley if desired and serve hot.
Notes
- Serve over pasta, mashed potatoes, or rice for a complete meal.
- For a lighter version, use half-and-half instead of heavy cream.
- Can be made ahead and reheated gently on the stovetop.
