- 1 lb chicken breasts or thighs
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 medium onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 6 cups chicken broth
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (adjust to taste)
- Salt and pepper to taste
- Fresh basil or parsley, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté until softened.
- Add garlic and cook for 1 minute until fragrant.
- Add chicken and season with salt, pepper, Italian seasoning, and red pepper flakes.
- Pour in chicken broth. Bring to a boil, then reduce to a simmer and cover.
- Cook for 20-25 minutes until chicken is cooked through. Remove and shred.
- Return shredded chicken to the pot and add sun-dried tomatoes. Simmer for 5 minutes.
- Stir in heavy cream and Parmesan cheese. Heat through until creamy.
- Taste and adjust seasonings. Garnish with fresh basil or parsley before serving.
