Description

A luxurious, comforting soup version of the beloved Marry Me Chicken, packed with creamy broth, tender chicken, sun-dried tomatoes, and herbs.


Ingredients

  • 1 lb chicken breasts or thighs
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • Fresh basil or parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté until softened.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Add chicken and season with salt, pepper, Italian seasoning, and red pepper flakes.
  5. Pour in chicken broth. Bring to a boil, then reduce to a simmer and cover.
  6. Cook for 20-25 minutes until chicken is cooked through. Remove and shred.
  7. Return shredded chicken to the pot and add sun-dried tomatoes. Simmer for 5 minutes.
  8. Stir in heavy cream and Parmesan cheese. Heat through until creamy.
  9. Taste and adjust seasonings. Garnish with fresh basil or parsley before serving.
