- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 3 cloves garlic, minced
- 1 cup chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes (packed in oil), chopped
- 1 tsp Italian seasoning
- 1/4 tsp red pepper flakes (optional)
- Fresh basil, chopped (for garnish)
Instructions
- Season chicken breasts with salt, pepper, garlic powder, and paprika.
- In a large skillet, heat olive oil over medium heat. Sear the chicken for 5-6 minutes per side until golden brown. Remove from skillet and set aside.
- In the same skillet, add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and deglaze the pan, scraping up any browned bits.
- Add heavy cream, Parmesan cheese, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Stir to combine and simmer for 2-3 minutes.
- Return chicken to the skillet, spooning sauce over the top. Simmer uncovered for 10-15 minutes until chicken is cooked through and sauce has thickened.
- Garnish with fresh basil and serve warm.
Notes
- Serve over pasta, mashed potatoes, or with crusty bread to soak up the sauce.
- Can be made with chicken thighs instead of breasts for more flavor.
