Description

Marinated Mini Sweet Peppers are a colorful, tangy, and slightly sweet appetizer or side dish. They’re quick to prepare and perfect for snacking, charcuterie boards, or as a vibrant topping.


Ingredients

  • 1 lb mini sweet peppers, halved and seeded
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 2 garlic cloves, thinly sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. In a large bowl, whisk together olive oil, red wine vinegar, garlic, oregano, salt, black pepper, and red pepper flakes.
  2. Add the halved mini sweet peppers to the bowl and toss to coat well.
  3. Transfer the mixture to an airtight container or a zip-top bag and refrigerate for at least 2 hours, preferably overnight, to marinate.
  4. Before serving, let the peppers come to room temperature and sprinkle with fresh parsley if desired.

  • Peppers can be marinated for up to 5 days in the fridge.
