1/2 cup packed brown sugar
-
2 large eggs
-
2 tsp vanilla extract
-
3 cups all-purpose flour
-
1 tsp baking soda
-
1/2 tsp salt
-
1 cup maraschino cherries, drained and chopped
-
1 1/2 cups semi-sweet chocolate chips
-
Optional: 1-2 tbsp maraschino cherry juice (for added cherry flavor)
Instructions
-
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
-
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
-
Beat in the eggs one at a time, then mix in the vanilla extract.
-
In a separate bowl, whisk together the flour, baking soda, and salt.
-
Gradually mix the dry ingredients into the wet mixture until combined.
-
Fold in the chopped maraschino cherries and chocolate chips. If desired, add 1–2 tablespoons of cherry juice for more flavor and color.
-
Drop rounded tablespoons of dough onto the prepared baking sheets.
-
Bake for 10–12 minutes, or until the edges are lightly golden.
-
Let cool on the pan for a few minutes, then transfer to a wire rack to cool completely.
Notes
-
Make sure cherries are well-drained and patted dry to avoid excess moisture in the dough.
-
White chocolate chips or dark chocolate chunks are great substitutes.
-
These cookies freeze well – store in an airtight container for up to 3 months.
