Description

This Magic Lemon Cobbler is a bright, sweet, and zesty dessert that practically makes itself! As it bakes, the layers magically flip—creating a golden, cakey top with a gooey lemon sauce underneath. It’s the perfect treat for spring and summer, and it comes together with just a few simple ingredients.


Ingredients

  • 1/2 cup (1 stick) unsalted butter

  • 1 cup all-purpose flour

  • 1 cup granulated sugar

  • 2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1 cup milk

  • 1 tablespoon lemon zest

  • 1/2 cup freshly squeezed lemon juice

  • 3/4 cup granulated sugar (for lemon layer)

  • 1 cup hot water


Instructions

  1. Preheat your oven to 350°F (175°C).

  2. Place the butter in a 9×9-inch baking dish and set it in the oven to melt. Once melted, remove from the oven.

  3. In a medium bowl, whisk together the flour, 1 cup of sugar, baking powder, and salt.

  4. Add the milk and lemon zest to the dry ingredients and stir until just combined.

  5. Pour the batter over the melted butter in the baking dish. Do not stir.

  6. In a separate small bowl, combine lemon juice and ¾ cup sugar. Stir until the sugar is mostly dissolved.

  7. Carefully pour the lemon-sugar mixture over the batter. Again, do not stir.

  8. Slowly pour 1 cup of hot water over the top of the entire mixture. Do not stir.

  9. Bake for 40 to 45 minutes, or until the top is golden brown and the cobbler is set in the center.

  10. Let cool for 15 minutes before serving. Best served warm with vanilla ice cream or whipped cream.


Notes

  • Fresh lemon juice gives the best flavor—avoid bottled if you can.

  • The batter rises above the lemon layer as it bakes, creating the magic cobbler effect.

  • This dessert is best enjoyed the same day but can be stored covered in the fridge for up to 3 days.
