- 1 lb Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 bunch kale, stems removed and leaves chopped
- 1 cup heavy cream
- 1/2 teaspoon crushed red pepper flakes
- Salt and pepper to taste
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
Instructions
- In a large pot, heat olive oil over medium heat. Add sausage and cook until browned, breaking it into crumbles.
- Add diced onion and cook until translucent, about 3-4 minutes.
- Stir in garlic, oregano, thyme, and red pepper flakes, and cook for another minute.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer for 10 minutes.
- Add chopped kale and cook until wilted, about 5 minutes.
- Stir in heavy cream and simmer for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
- Use spicy sausage for an extra kick of heat.
- You can substitute spinach for kale if preferred.
- Adjust the creaminess by adding more or less heavy cream.
- For a thicker soup, add a handful of cauliflower rice.
