Description

A hearty and comforting low-carb soup packed with flavorful sausage, tender kale, and rich broth, perfect for a healthy meal.


Ingredients

  • 1 lb Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 bunch kale, stems removed and leaves chopped
  • 1 cup heavy cream
  • 1/2 teaspoon crushed red pepper flakes
  • Salt and pepper to taste
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme

Instructions

  1. In a large pot, heat olive oil over medium heat. Add sausage and cook until browned, breaking it into crumbles.
  2. Add diced onion and cook until translucent, about 3-4 minutes.
  3. Stir in garlic, oregano, thyme, and red pepper flakes, and cook for another minute.
  4. Pour in chicken broth and bring to a boil.
  5. Reduce heat and simmer for 10 minutes.
  6. Add chopped kale and cook until wilted, about 5 minutes.
  7. Stir in heavy cream and simmer for an additional 5 minutes.
  8. Season with salt and pepper to taste.
  9. Serve hot and enjoy!

Notes

  • Use spicy sausage for an extra kick of heat.
  • You can substitute spinach for kale if preferred.
  • Adjust the creaminess by adding more or less heavy cream.
  • For a thicker soup, add a handful of cauliflower rice.
