Loaded Smothered Beef Burritos are hearty and flavorful, packed with seasoned ground beef, beans, cheese, and rice, then rolled up in tortillas and smothered in a savory enchilada sauce and melted cheese.

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (15 oz) refried beans
- 1 cup cooked rice
- 1 1/2 cups shredded cheddar cheese, divided
- 1 can (10 oz) red enchilada sauce
- 6 large flour tortillas
- 1/4 cup chopped cilantro (optional, for garnish)
- 1/2 cup sour cream (optional, for serving)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
- Add diced onion and cook until softened, about 3 minutes. Stir in garlic and cook for another 30 seconds.
- Add taco seasoning and water. Stir to combine and simmer for 2–3 minutes until thickened.
- Stir in refried beans and cooked rice. Mix until heated through and well combined. Remove from heat.
- Lay out flour tortillas and spoon an even amount of the beef mixture into the center of each. Sprinkle with 1 cup of the shredded cheese.
- Roll up each burrito tightly and place seam-side down in the prepared baking dish.
- Pour enchilada sauce evenly over the top of the burritos. Sprinkle remaining cheese on top.
- Bake uncovered for 15–20 minutes, until cheese is melted and bubbly.
- Garnish with chopped cilantro and serve with sour cream if desired.
Notes
- You can substitute ground turkey or shredded chicken for the beef.
- Add jalapeños or hot sauce for a spicy kick.
- These burritos freeze well—wrap individually and reheat as needed.
