Description

Loaded Smothered Beef Burritos are hearty, cheesy, and packed with seasoned ground beef, beans, and rice, all wrapped in a flour tortilla and smothered in enchilada sauce and melted cheese.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup cooked rice
  • 1 cup canned refried beans
  • 1 cup canned black beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups red enchilada sauce
  • 1/4 cup chopped green onions (optional)
  • 1/4 cup sour cream (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef over medium heat until browned. Drain excess grease.
  3. Add taco seasoning and water to the beef, stir well, and simmer for 5 minutes.
  4. In a large bowl, mix cooked rice, refried beans, black beans, corn, and the seasoned beef.
  5. Lay out flour tortillas and evenly divide the mixture among them. Roll into burritos and place seam-side down in a greased baking dish.
  6. Pour enchilada sauce evenly over the burritos and top with shredded cheese.
  7. Bake uncovered for 20-25 minutes or until cheese is melted and bubbly.
  8. Garnish with chopped green onions and a dollop of sour cream if desired. Serve hot.

Notes

  • You can substitute ground beef with shredded chicken or turkey for a leaner option.
  • Use green enchilada sauce if you prefer a different flavor profile.
  • Top with jalapeños for extra heat.
