- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 cup cooked rice
- 1 cup canned refried beans
- 1 cup canned black beans, drained and rinsed
- 1 cup frozen corn, thawed
- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- 2 cups red enchilada sauce
- 1/4 cup chopped green onions (optional)
- 1/4 cup sour cream (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, cook ground beef over medium heat until browned. Drain excess grease.
- Add taco seasoning and water to the beef, stir well, and simmer for 5 minutes.
- In a large bowl, mix cooked rice, refried beans, black beans, corn, and the seasoned beef.
- Lay out flour tortillas and evenly divide the mixture among them. Roll into burritos and place seam-side down in a greased baking dish.
- Pour enchilada sauce evenly over the burritos and top with shredded cheese.
- Bake uncovered for 20-25 minutes or until cheese is melted and bubbly.
- Garnish with chopped green onions and a dollop of sour cream if desired. Serve hot.
Notes
- You can substitute ground beef with shredded chicken or turkey for a leaner option.
- Use green enchilada sauce if you prefer a different flavor profile.
- Top with jalapeños for extra heat.
