Scale
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 3 cups prepared mashed potatoes (about 2-3 large potatoes)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 tablespoons ketchup (for topping)
- 2 tablespoons chopped fresh parsley (optional garnish)
Instructions
- Preheat oven to 375 °F (190 °C).
- In a large skillet over medium heat, cook ground beef with diced onion and garlic until beef is browned and onion is soft, about 5–7 minutes. Drain excess fat.
- Season beef mixture with Worcestershire sauce, Italian seasoning, salt, and pepper; stir to combine.
- Spread seasoned beef evenly in the bottom of a greased 9‑inch by 13‑inch baking dish.
- In a separate bowl, combine mashed potatoes, shredded cheddar, and sour cream until smooth.
- Spoon mashed potato mixture over beef layer and smooth the top.
- Drizzle ketchup on top in a zigzag pattern.
- Bake for 20–25 minutes until casserole is heated through and cheese is melted.
- Optionally, broil 2–3 minutes to get a slight golden top—watch closely to avoid burning.
- Remove from oven, let rest 5 minutes, then garnish with chopped parsley before serving.
Notes
- Make ahead: assemble in dish, cover, and refrigerate up to 24 hours; bake when ready.
- Swap mashed potatoes for cauliflower mash to lighten it up.
- Use leftover meatloaf mix or roasted ground beef as the base layer.
- Add veggies like green beans or corn in between layers for extra nutrition.
- Leftovers reheat well in microwave or oven; cover when reheating to retain moisture.
